One of the Historic Sussex Hotels group, Bailiffscourt Hotel & Spa near Climping beach in West Sussex is modelled on a medieval manor house despite being commissioned by Walter Guinness of the brewing dynasty less than a hundred years ago. Its charm is pure country chic, with three dozen rooms choc-full of art and antiques – many with vaulted ceilings, roll-top baths and four-poster beds. But while the stonework, wood panelling and fireplaces might take inspiration from the Middle Ages, the spa is bang up to date, offering treatments such as Champagne & Truffles

In the heart of the Scottish capital, Edinburgh’s 16th century The Witchery at the gates of the city’s Castle is a dramatic medley of old fireplaces, rich tapestries and gilded ceilings. The Pig near Bath in Somerset is a tranquil country house that modestly describes itself as a restaurant with rooms – but, wow, what rooms!
