One of the Historic Sussex Hotels group, Bailiffscourt Hotel & Spa near Climping beach in West Sussex is modelled on a medieval manor house despite being commissioned by Walter Guinness of the brewing dynasty less than a hundred years ago. Its charm is pure country chic, with three dozen rooms choc-full of art and antiques – many with vaulted ceilings, roll-top baths and four-poster beds.
